Ghee - “Tongue of the gods”

When you start to deal with Ayurveda, there is one thing you cannot avoid: Ghee! Better known to us as clarified butter, ghee is indispensable in Ayurvedic cooking as well as in therapy. It is considered a Rasayana. Rasayana is a Sanskrit term which can be roughly translated as "path of essence". Rasayana in Ayurveda refers to foods that have rejuvenating and life-prolonging properties.
Ghee has the quality of snigda (oiliness, unctuousness). It is smooth, lubricating and nurturing. Ghee makes the voice soft and melodious. Ghee is Guru (heavy). It mildly increases the qualities of Kapha and decreases Pitta and Vata, which are both light. In moderation, ghee balances all the doshas. Ghee has the quality of mrdu (softness). In Ayurvedic Panchakarma treatments, ghee is the oil used on the eyes. In Netra Basti, (eye-bath) a small dam is built around the eyes and filled with warm ghee. Then, the patient opens his eyes to its soothing softness. After that treatment, one sees the world though a soft diaphanous curtain of love and loveliness.

It keeps our body channels (srotas) clean as it penetrates even the finest layers of cells, thus detoxifying, cleansing, regenerating and rejuvenating.
Ghee strengthens our immune system, promotes healthy Agni (digestive fire) and improves memory.
It supports cell renewal and facilitates the absorption of vitamins, trace elements and minerals from the diet
Ghee itself contains many vitamins and minerals, such as vitamins A, E, D and K, sodium, calcium, magnesium, iron, and many more.
Ghee can bind harmful substances, which are then removed from the body with the help of elimination procedures (Panchakarma therapy).
It helps internally and externally with dry skin
Thus, ghee is one of the most important nourishing agents in Ayurveda.
I personally use it more and more in my kitchen to cook and bake.
