Vegan Carrot Cake

While i am having a cup of tea and a slice of cake on a rainy day I thought its a good time to write a recipe for a vegan version of my carrot cake.
Good for cozy sundays and all other days
Ingredients:

450g carrots, grated
170g vegan butter or sunflower oil
150g apple mash
250g whole grain flour
2tsp baking powder
1tsp natron
2tsp apple vinegar
200g ground almonds
100g maple sirup
1tsp grated ginger
2tsp cinnamon
3x kardamom seeds
pinch of salt
Decoration:
150g Cashews soaked in water
50g grated coconuts
1tsp poppy seeds

Preheat your oven on 180C.
First mix all dry ingredients, mix well before adding the rest.
Mix in the carrots last and whip them carefully under the dough.
The cake goes for 45 minutes in the Oven.
For the topping mix soaked cashews in a blender and add on your cake when its cooled down.
Sprinkle coconut and poppy seeds on top.
